Pink Box is a take-away stand at Mae Hia Market that does Western comfort food: burgers, wraps, burritos and pasta, along with some Thai dishes. The useful part is that most of it comes in vegan versions too, including vegan burgers, burritos and Thai food. It's quick and cheap, and you can grab something while shopping at the market. It's open from morning until early evening.
